Blueberry Curd Bowl: Breakfast in Two Minutes

Written By Terra Fresh
Blueberry curd bowl with honey dripping from a wooden dipper

Thick curd, a handful of blueberries and a little honey. That is the whole recipe, and it works every single morning.

Ingredients

  • A bowl of thick curd or hung curd
  • A handful of jumbo blueberries
  • A teaspoon of honey

Method

  1. Spoon the curd into a bowl and smooth the top.
  2. Top with a handful of blueberries.
  3. Drizzle over a little honey.
  4. Eat it cold.

Why it works

Curd is tangy and creamy. Blueberries bring a little pop, sweetness and a hint of tartness. Honey pulls the two together.

Make it yours

  • Add roasted seeds or nuts for crunch.
  • Lightly crush a few blueberries and swirl them in.
  • Swap honey for jaggery syrup.

Tip

Keep blueberries in the fridge, unwashed and dry, and rinse only the handful you need. They will last you a full week of breakfasts.
