Apple kheer is one of the quiet stars of Navratri fasting. Creamy, lightly sweet, fragrant with cardamom, and made from things you already have.
Ingredients
- Half a litre of milk
- 2 tablespoons of sugar
- A pinch of cardamom powder
- 1 Chile apple
- A few almonds and pistachios, chopped
Method
- Simmer the milk, stirring often, until it thickens slightly, about 15 to 20 minutes.
- Stir in the sugar and cardamom, take it off the heat and let it cool completely.
- Peel and grate the apple straight into the cooled milk and stir.
- Chill, then top with chopped nuts.
The one rule
Add the apple only after the milk has cooled. Hot milk and raw apple together can make the milk split. Cool milk first, then apple, every time.
Make it yours
- Swap sugar for jaggery or a little honey once the milk has cooled.
- Add a few strands of saffron while the milk simmers.
- Mix in a grated Korean pear for extra juiciness.
Tip
Grate the apple just before you add it. Grated apple browns fast, and a fresh grate keeps the kheer pale and creamy.
